I don't have any info on any Baby Doe's silver plated tokens (I don't think the casino made any), but they did issue one like you described in proof condition. I suspect that's what you have. It has a current book value of $60.
Also, I don't know how many of these proof tokens they made, but this type of item in Colorado isn't usually made in very large numbers.
