I am trying to make sense of all of this. Is the issue with slabbing the assigning of relative grading (example a is "better" then example b), the expertise of the gradded (who is doing the gradding) or is it the eventual price differentiation that will result with different grades of each chip.

All three are different and exclusive arguements and need to be discussed ont their individual merits. Not just lumped into the "slabbing is death" battel cry. If this is a battel that needs to be one (still to be determined) we need to fight with facts and information.
