Scan Quality

I'd say your Adobe software is getting a scan at 72 pixel resolution and using the absolute maximum compression for a JPEG file, Travis. Your original scan is at 150 pixels per inch and makes a file 228K in size. The one from Adobe is only 15K in size.

I don't know which Adobe program you are using, but somewhere along the "Save As" step it should ask you about parameters for the JPG file. Pick something closer to 5 (on a scale of 0 to 10) and you should get a better image (that takes more file space, of course). I don't know how you are getting a lower resolution image. On my Adobe, whatever I scan at is what appears in the program unless I use the "Image Size" feature to change it. Possibly when you first set up Adobe to use your HP as it's scanner for importing pictures you told it to scan at 72 pixels per inch? You could try reinstalling the scaner in Adobe.

Let me know how it goes.
