I haven't taken that trip, but have ridden the jet-foil from Hong Kong to Macau to visit the casinos there. It is very much like riding a jet aircraft, noise is fairly loud and has the typical whine of a jet. Crossing was smooth but there are seatbelts just like on a commercial jet, and as I recall, the craft was even built by one of the US plane makers.
Depends on what about a jet plane trip you fear. If it's the height, you have no problems as the cabin never gets more than a few inches above the water. The experience is much the same as a plane ride inside the cabin, however. Not the same as a leisurely car-ferry crossing <g>.
