I just got off the phone with a very nice woman at the Big Texan Hotel (adjacent to the restaurant) who tells me that back in the mid to late 1980's they ran a "For Fun Only" casino at the place.

I am going to correspond with her via internet and she is going to dig up any info she can for me, and maybe some more chips! I'll keep you all posted.
