I have never been at a casino where they DON'T spread the new cards out in front of the player. It insures the the dealer is not in cahoots with one of the players (the dealer could load the deck with aces) since the cameras can also pick out each card. If you are sitting at a table and they just bring in 6 new decks and the dealer never spreads them I would get up and leave ASAP. I could see this happening at a table with an automatic shuffler.
