One reason for a burn, is to keep a dealer from dealing 2nd's.
With a burn he has to be good enough to deal 3rd's.
2nd reason is to keep him from flashing the top card to the one seat.
Quite an advantage if you are in the one seat.

There are other reasons but mainly because "gaming said so"
