Jim,

No, with 11 players the maximum number of cards that will be in play is only 27. Each of the 11 players will be dealt 2 cards. Those are the only cards that each player gets that are unique to him. (So far we have 22 cards in play). Betting is done on these two cards alone. Then 3 more cards are turned face up on the table (all at one time). Everyone uses these cards with their 2 cards to make a poker hand. This is called "the flop" (25 total cards in play so far). Betting is done on these cards. Then another card is turned face up next to the 3 on the table. This is called the "turn card". Betting is now done again. Then one final card is turned and placed face up next to the other 4. This is called "the river card". So now there are 2 cards in each players hand, unique to them, and 5 cards face up on the table that all players use to make the best 5 card poker hand. Betting is again done, and the best hand takes the pot.

So I guess this is a long answer to your question! But only 27 cards total will be used in any given hand of Texas Hold em with 11 players playing. On an average hand there would probably be 6 to 7 players see the flop (in a tournament). It would be very rare to have more than 2 or 3 stay all of the way and show their cards to see who is the winner. Many people see a lot of flops, and make their decision after that in tourney play. A little more conservative in Live Play (depending on the betting limits of the game. In lower limits, more people tend to pay the few bucks to see the flop).
