The problem here is not how many dealers the Orleans will have on duty. It is how many tables will be available. There will be a full crew of dealers on hand for the 8PM tournament.
Example of what can happen:
Say Perlowski desides to forgo his 7PM bedtime to play in the tournament. He is 2nd in sign up line behind your very pretty wife. He will be very irritated when the $6 per hour cashier tries to find out if she can take 40 entries from a pretty lady that is not even registering herself. She or he will call the shift mgr. She or he will start looking for someone in charge of the CC>CC. (David H will not be in until later as he has 2 tournaments to run that night) Hopefully Archie or Wayne will be found. ( In the meantime smoke is starting to come out of Jimbo's ears)
Archie or Wayne will didavowel all knowledge of a CC>CC poker tournament. "what tournament" ( Jimbo is pawing the carpet getting ready to charge.) Shift manager makes a decission. Take the pretty ladys money.
It will kake about 20 more minutes to record all the names. ( lord only knows what Jimbo is about ready to do)
40 sign ups complete. Jimbo steps to the window after being 2nd waiting 1 hour. The cashier says " sorry Jimbo the tournament is full".
"IT WILL NOT BE A PRETTY SIGHT" - for ever and ever and ever!!!!!

More than 40 will get to play, if we get that many. Poker mgrs are very flexible and ingenius when there are people that want to play poker. David is one of the best poker mgrs in town. Not sure what David would say, but I can and would deal if necessary. I predict everyone that wants to play, will.
